			<content:encoded><![CDATA[<p>As much as I love this hearty soup, I rarely make it since my hubby stays away from chickpeas. This recipe  is the traditional greek chickpea soup, made with few ingredients and is dead simple to prepare.</p>
<p>Chickpeas are an excellent nutritional choice.  A serving (165 gr) of chickpeas  has about 14.5 gr of protein  and  13 gr of  dietary fiber. It is also a good source of Copper, Folate and Manganese.</p>

<p>Ingredients (4 servings)</p>
<ul>
<li>350gr soaked chickpeas</li>
<li>salt &amp; pepper</li>
<li>juice from 1 lemon</li>
<li>olive oil</li>
<li>corn flour (or plain flour for thickening), 1 Tablespoon</li>
<li>big onion quartered</li>
</ul>
<p>First you have to soak in water the chickpeas over night, they become double in size. Next day add them in a pot with plenty of water and bring to boil. Keep removing the foam that is created from boiling the chickpeas, you only need to do this 3 to 4 times, add the onion and boil in medium heat for an hour or until the chickpeas become tender. Take out the onion completely, and maybe if needed add some more water.</p>
<p>In the lemon juice dilute the corn flour and add to the pot. At this stage add the salt &amp; pepper and the olive oil (about 4T), reduce the heat and let it shimmer for about 15mins. Your soup is ready!</p>
<p>If you have leftovers, you can lift the chickpeas from the liquid and make some tasty houmous or add some chopped spring onions &amp; parsley and make yummy veggie patties.</p>

<p>Σημερα δοκιμαστικα στην παρασκευη κριτσινιων, η συνταγη ειναι το το βιβλιο της <a href="http://mikrikouzina.blogspot.com/2010/01/blog-post_20.html" target="_blank">Κικης με την μικρη κουζινα</a>. Ειναι τα κριτσινια καροτου.  <em>Γεια σου Κικη, πολυ ωραια τα κριτσινακια σου!</em> Το απογευμα θα παιξει μοιρασμα  διοτι εγιναν τοσα πολλα!</p>
<p>Και επειτα εκανα και ενα ντιπ για τις βουτες.</p>

			<content:encoded><![CDATA[<p>It has been quite some time since I made crepes, maybe a few years! I love them crispy and thin with maple syrup, cinnamon and maybe some sliced banana.  So, with an excuse of buying a cheap crepe pan (a bit of a disaster) I got to make some. It was Sunday afternoon and after a light lunch, I thought about testing the pan. So here is my recipe for very simple  but tasty crepes.</p>
<p><em>makes 6</em></p>
<p>1 cup plain white flour /  <span style="color: #808080;">1 κουπα απλο ασπρο αλευρι</span></p>
<p>1 cup of any nut milk , I used soy milk vanilla flavored &#8211; <em>room temperature </em>/  <span style="color: #808080;">1 κουπα γαλα απο σογια ή αν εχετε καποιο αλλο γαλα απο καρπους</span></p>
<p>1tsp sugar/  <span style="color: #808080;"> 1 κ. γλ. ζαχαρη</span></p>
<p>1/4 tsp salt /   <span style="color: #808080;">1/4 κ. γλ. αλατι</span></p>
<p>1/4 cup melted margarine   /    <span style="color: #808080;">1/4 κουπα λιωμενη μαργαρινη</span></p>
<p>Chuck everything in a bowl and whisk, whisk, whisk. And don&#8217;t forget to put your pan on the stove,  and on high temperature. If its non stick (better be) you don&#8217;t have to use any oil.</p>
<p><span style="color: #808080;">Χτυπηστε ολα τα υλικα μαζι σε ενα μπωλ, ενω εχετε βαλει το τηγανι σας στο ματι (υψηλη θερμοκρασια). Εαν χρησιμοποιειτε αντικολλητικο τηγανι τοτε δεν χρειαζεται να το λαδωσετε.</span></p>

<p>You can leave the batter in the fridge for 30mins if you can wait. I didnt. Depending of the size of your pan, pour about 3 to 4 tablespoons,  I use a ladle and it makes my life easier.</p>
<p>I served them with maple syrup and some melted dark chocolate(thinned with some soy milk).</p>
<p><span style="color: #808080;">Αν μπορειτε να περιμενετε, βαλτε το μπωλ με την ζυμη στο ψυγειο για κανενα μισα-ωρο, εγω το χρησιμοποιησα κατευθειαν <img src='http://www.kikidicreations.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   H ποσοτητα που χρειαζεστε ειναι αναλογα με το μεγεθος του τηγανιου σας. Εμενα με βολευει πολυ να χρησιμοποιω μια κουταλα της σουπας για να ριχνω την ζυμη στο τηγανι.</span></p>
<p><span style="color: #808080;">Τις σερβιρα με σιροπι σφενδαμου και λιωμενη σοκολατα υγειας.</span></p>

I asked him a couple of days ago to provide me with a recipe to post, because I lately cannot find the time to cook during the day, so that I can take decent photos of my dishes.</p>
<p>So here we have the totally vegan &amp; raw soup recipe originated from <a href="http://en.wikipedia.org/wiki/Andalusia" target="_blank"><span lang="es" xml:lang="es">Andalucía</span> in Spain</a>.</p>
<p>It&#8217;s perfect for the hot summer days, as you serve it chilled in a bowl or in a mug.</p>
<p>So here we go George writes:</p>
<p>&#8220;Gazpacho is cold tomato soup . It comes from Andalucia and it is very popular in Spain.<br />
My favorite version of Gazpacho soup, is ideally made in the summer, it&#8217;s very refreshing healthy and easy to make, and it only take few minutes to prepare.</p>

Ingredients</em><br />
5 ripe tomatoes (or tomato juice)<br />
1 cucumber peeled de seeded and chopped<br />
Mint leaves (as many as you want)<br />
2 red peppers de seeded and chopped<br />
2 sticks of celery<br />
1 garlic clove minced (optional)<br />
Few drops of Tabasco (optional)<br />
Few drops of virgin olive oil<br />
<em></em></p>
<p><em>Put the tomatoes, celery, red peppers, garlic, Tabasco and cucumber in<br />
a blender and process until get smooth</em>.</p>
<p>Chill in the fridge until you are ready to serve.</p>

<p><span style="color: #483d8b;">Πριν καποιες μερες ζητησα απο τον αγαπημενο και συναμα ξενιτεμενο αδερφο μου, ο οποιος ειναι μαγειρας, ζει και εργαζεται στο Εδιμβουργο (Σκωτια), να μου ετοιμασει μια συνταγη, διοτι αυτες τις μερες τρεχω και δεν φτανω και το μαγειρεμα γινεται συνηθως το βραδι, οποτε καλες φωτογραφιες χωρις το φως της ημερας δεν λεει.</span></p>
<p><span style="color: #483d8b;">Και μου ετοιμασε μια χορτοφαγικη και επισης ωμοφαγικη σουπα, η συνταγη προερχεται απο την Ανδαλουσια Ισπανιας. Αυτη η σουπα ειναι καταλληλη για το καλοκαιρι, διοτι μας βοηθαει να ανταπεξελθουμε στις καυτες αυτες μερες, εφοσον σερβιρεται δροσερη απο το ψυγειο.</span></p>

I have heard about this Levantine dish/ starter but never had the chance to try it or to make it myself. But I am on cooking mode these last 3 days, and the fact that I love roasted aubergines and most importantly it is quick and super easy to make.</p>
<p>This dish can be found in Lebanon and Syria, in Greece we have a similar version called &#8216;melitzanosalata&#8217;</p>

<p>So, after put the aubergines in the oven in high heat 200 to 220c, let them roast for 45mins to an hour, it depends on their size.</p>
<p>After you take them out of the oven, let them cool a bit and then scoop their flesh out and put it in a sieve to drain any liquids. In the mean time you can chop &amp; have ready the rest of the ingredients.</p>

<p><span style="color: #483d8b;">Τις τελευταιες  μερες εχω μια ακουραστη ορεξη να μαγειρευω, και διαβαζοντας την συνταγη της συνονοματης Κικης απο το <a href="http://mikrikouzina.blogspot.com/" target="_blank">mikrikouzina.blogspot.com</a>, ειπα να την δοκιμασω ετσι να ξεφυγω απο την ελληνικη μελιτζανοσαλατα. Ετσι αντι για ξυδι, εδω χρησιμοποιησα χυμο λεμονιου και το συστατικο που του δινει μια διαφορετικη γευση <em>- το ταχινι</em>!</span></p>
<p><span style="color: #483d8b;">Το ιδιο κιολας απογευμα, μετα την δουλεια, πηγα και προμηθευτικα 2 παχουλες  μελιτζανες και φρεσκο μαιντανο που δεν ειχα. Μολις μπηκα σπιτι εβαλα της μελιτζανες, αφου τις τρυπησα εδω κι εκει, στο φουρνο στους <em>200 βαθμους</em> και τις αφησα  για 50 λεπτα.</span></p>
<p><span style="color: #483d8b;">Επειτα της αφησα για λιγο να κρυωσουν και μετα εβγαλα την ψιχα τους με ενα κουταλι, οπου και αφησα μεσα σε ενα στραγγιστηρι για να φυγουν ολα τα υγρα της μελιτζανας.</span></p>

<li><span style="color: #483d8b;">χυμο  απο 1/2 λεμονι</span></li>
<li><span style="color: #483d8b;">3 κ. σουπας ελαιολαδο</span></li>
<li><span style="color: #483d8b;">σκορδο ψιλοκομμενο  &#8211; 2 σκελιδες</span></li>
<li><span style="color: #483d8b;">αλατι &amp; πιπερι</span></li>
</ul>
